For softsubs, a program like Potplayer or VLC will have built-in keyboard shortcuts to quickly align the subtitles with the video. There are 2 main functions: Shift or Sync. There's a lot of room for improvement in transcription and subtitles in general. SubShifter will help you fix your subtitles. I don't have anything that runs macOS, and I'm not willing to buy a whole new computer for it, but this sounds like something that could help the community if used properly and the results are shared.
